Marshmallow Raspberry Joy

Ingredients

strawberries / raspberries (frozen) 200g
juice of half a lemon
powdered sugar 150g
gelatin 15g
icing sugar, coconut for sprinkling taste

Cooking method

  • I took this delicious recipe from VikaSN at CookingDoma. Modified a little.

  • So, the original composition:

  • * 200 g strawberries (can be frozen) *** I took raspberries
  • * juice of half a lemon
  • * 150 g icing sugar
  • * 15 g of gelatin (ATTENTION! Be sure to check the instructions on the package - you may need to change the amount of gelatin!)
  • * powdered sugar for sprinkling *** I took both powdered sugar and coconut



  • Preparation:

  • Prepare the form (this must be done right away): cover the form with baking paper. Lightly grease the paper with odorless vegetable oil.
  • Wash and dry the strawberries / raspberries. Defrost frozen strawberries / raspberries. Do not drain the juice, use it with berries.
  • Grind strawberries / raspberries, powdered sugar and lemon juice in a blender until smooth. Put the mass on fire, add gelatin. Heat the mass, stirring constantly, until the gelatin is completely dissolved. ATTENTION! Be sure to check the instructions on the package - maybe your gelatin cannot be very hot!
  • Cool the mass to room temperature. I put the container in the refrigerator for a while. Transfer to a large bowl and beat with a mixer until soft peaks. If you beat until firm peaks, then the mass immediately solidifies, it is inconvenient to transfer it into a mold.
  • During whipping, the gelatinous mass will greatly increase in volume and brighten considerably.
  • Transfer the whipped mass into a mold, smooth and leave at room temperature for 10-24 hours. No need to cover!
  • Marshmallow Raspberry Joy

  • Sprinkle the work surface evenly with powdered sugar / coconut. Turn the frozen marshmallow over to powder, carefully remove the paper. Cut the layer into squares, washing and drying the knife for each cut. You can lightly grease the knife with odorless vegetable oil.
  • Roll the squares in powdered sugar / coconut.
  • Marshmallow Raspberry Joy

There is a question. what gelatin did you use? what amount of liquid is it protected for?

I used gelatin of the company "Mriya" (25g) (Ukraine, Chernigov). On the packaging it is written: instant food gelatin (P-11). It is also recommended there (for making jelly!): 1 full tablespoon of gelatin for 2 glasses of liquid (0.4 l).

In general, I don't like the taste of gelatin in a cooked dish. Previously, when I made fruit jelly, this gelatinous aftertaste was a little annoying. And, having prepared this dessert, I was pleasantly surprised - no taste of gelatin! Only the taste of raspberries with pleasant sourness, shaded by coconut I really liked this combination

Recently I made a marshmallow cake, consisting of two "cakes":
1) strawberry cake (made from fresh strawberries);
2) blackberry-blackcurrant (made from frozen berries).
I wanted to make it three-layer. 3rd layer - white marshmallow, but alas, it was not "marshmallow day"

This is how it turned out a marshmallow cake:

I decided to experiment with the amount of gelatin. I added 18g of gelatin to the 1st cake, and 15g to the second, as in the original recipe.
So the biscuits turned out to be really different in consistency (next time I'll experiment with the same berry to make sure it's not about them).

In our current hot conditions, the second cake without a refrigerator began to creep
And the first retained its original state (apparently, a greater amount of gelatin affects).

Another experiment with marshmallows

This time I made blueberry

pumpkin

Pumpkin turned out to be so interesting to taste !!! I really liked it.
For pumpkin marshmallow:
* I made pumpkin puree (I baked the pumpkin in the oven and then chopped it with a blender) and used it.
* Reduced the amount of lemon juice in the recipe to 1 tbsp. l. (I wanted the marshmallows to be very sweet).
