Chicken stuffed with pancakes

Ingredients

Chicken (carcass) 1.8-2.3 kg 1 PC.
Fresh mushrooms 300-400 g
large onion 1 PC.
rast. oil optional
cheese (like Russian) 300 g
eggs 3-4 pcs.
mayonnaise 100 g
salt pepper taste
ready-made pancakes according to your favorite recipe 12-16 pcs.

Cooking method

  • We take a chicken carcass, preferably more, at least 1.5 kg. Gently, as far as possible, undermining the skin and connecting films under the skin, where necessary, trimming, remove the skin from the carcass, while leaving the wings and legs intact.

  • Cut off the meat from the freed carcass, cut it into small pieces, salt, pepper. Fry on rast. oil until half cooked, until golden brown. Fry finely chopped mushrooms and onions in another pan. When the meat has cooled slightly, twist it in a meat grinder. Mix with mushrooms and onions. Usually at this stage, if the minced meat is dry, I add a few tablespoons of broth or sour cream until the minced meat is more moist (so as not to crumble).
  • Pancakes can be prepared in advance. I love using custards - they are tender and soft. We take a pancake, put on it from the edge along the entire width of 2 tbsp. l. with a slide of filling and roll it up. Beat eggs, add grated cheese to them, mix.

  • Lubricate the chicken skin inside with mayonnaise. Dip the prepared pancakes in an egg-cheese mixture and stuff the chicken, laying the pancakes along the carcass. It is not necessary to lay very tightly, otherwise, when baked, the skin shrinks and may burst. It usually takes 16-18 pancakes for 2-2.3 kg of chicken. We carefully sew up all the holes in the skin, thoroughly grease the chicken with mayonnaise

We love this chicken very much. I have already gotten used to freeing the carcass from the bones, now it turns out quickly. I twist the fried onions and mushrooms together with the meat in a meat grinder, salt, pepper and add a raw egg.
