Venezuelan banana pie with walnuts

Ingredients

Wheat flour 1.5 tbsp.
Sugar 2 tbsp. l.
Butter 100 g
Yolks 2 pcs.
For filling:
Ripe medium bananas 6 pcs.
Brown sugar 1/2 tbsp.
Butter 1 tbsp. l.
Egg whites 3 pcs.
Halves of walnuts 1 glass
Raisins 1 glass
Dark rum 4 tbsp. l.
Ground cinnamon 1/2 tsp
Ground allspice 1/2 tsp
Vanilla sugar 1 tsp
Ground nutmeg 1/4 tsp
Ginger powder 1/2 tsp
A pinch of salt
Butter for lubrication
Freshly ground allspice

Cooking method

  • Preparation:
  • 1. Pour dark rum over the raisins one day before making the cake. Soften butter at room temperature. For the dough, mix flour with sugar and salt, add butter and rub into crumbs with your fingers. Add the egg yolks and knead to an elastic dough. If it gets too dry, add a little water or milk. Cover the dough with plastic wrap and refrigerate for 1 hour.
  • 2. For the filling, place the banana pulp in a blender and mash. Add sugar, vanilla sugar, all spices, raisin rum, butter and whisk. Transfer the mixture to a deep bowl and add the nuts and raisins.
  • 3. In a separate bowl, beat the cooled egg whites and salt into a stiff froth. Using a silicone spatula, gently stir the whites into the banana mixture using a silicone spatula.
  • 4. Roll the chilled dough into a flat cake. Grease a round shape with a diameter of 22-26 cm with oil and put the dough in it, making the sides. Pour the filling inside and place in an oven preheated to 200 degrees for 5 minutes, then reduce the temperature to 180 degrees and bake the cake until tender, 25 minutes. Remove the cake from the oven, sprinkle with allspice, refrigerate and serve with hot chocolate or coffee.

Tanya, I spent a long time on this cake (although, as for me, this is the purest pie, but you cannot throw out words from the song, since the authors of the book called it a cake, even if it remains for them) I could not make up my mind, there are too many beechain the recipe it seemed, although the eye was laid on it as soon as I saw it in the book.It turned out that there was absolutely no hassle with its preparation, everything was just like twice two! Instead of rum, I took cognac, there would be no cognac, without hesitation I would replace it with any alcohol available.
