Ingredients

milk 500 ml
raw yeast 100 g
sugar 300 BC
flour 1000 BC
margarine 100 g
homemade sour cream 300 BC
egg 10 pieces.

vegetable oil 60 g
cognac 50 ml.
raisins 50 g
almond 50 g
dates 50 g
canned pineapple rings 1 can
lemon juice 3 tbsp. l.
mint syrup 1 tsp
lingonberries and cranberries 1 tbsp. l.
confectionery sprinkles 2 packs

Cooking method

  • Dough: melt margarine, mix with homemade sour cream and vegetable oil. Pour into an enamel pan with pre-prepared dough (add 2 tablespoons of sugar, yeast, 4 tablespoons of premium wheat flour to warm milk and leave for 3-4 hours in a warm place) and add 7 yolks ground with 200 gr. sugar with added salt and brandy. Next, stir in the raisins, chopped almonds, finely chopped dates and 1 kg. flour. In the process of mixing, add three more yolks. Knead the dough until the mass begins to lag behind the hands and from the sides of the pan. We put the pan in a warm place, knock it down twice, after the dough has risen for the third timeCake with a surprise, put it into molds pre-greased with vegetable oil (at the rate of 2/3 of the volume of the mold). Divide the measured piece of dough into three parts, put it in a mold, alternating with two pineapple rings (we first let the juice drain). When the dough rises in the molds, put in the oven for 20-25 minutes, at medium temperature. We take the finished cakes out of the oven, put them on a wet towel and immediately take them out of the mold. Decorate the cooled Easter cakes.
  • Decoration: used the remaining dough, whipped protein with sugar and lemon juice. Mint syrup (green) and berries of lingonberries and cranberries (depending on the amount of berries - colors are obtained from gray-blue to intense pink) are added as a dye. The design of the cake reflects the spring theme. In the middle is laid out a lawn (colored squirrels) with dandelions (yellow sprinkling), white "icicles" "stretch" along the edges, at the ends of which "water" is collected from proteins, which "freezes" after a couple of hours, creating the illusion of a spring drop in the design of the cake ...

Canned pineapple rings, before putting in a mold, be sure to drain the liquid from the jar, then I also “blot” with a towel ... I think the shelf life of cake with pineapple is no less than with raisins. I use marzipan mainly for decoration, in cakes, in dough, until I add it.
