Popovskaya cottage cheese Easter on boiled yolks

Ingredients

cottage cheese 400 g
butter 160 g
sugar 160 g
cream 35% (can be replaced with fat sour cream) 80 g
eggs 2 pcs.
raisins, candied fruits 100 g
a bag of vanilla sugar.

Cooking method

  • Boil the eggs, separate the yolks. Grind the butter with sugar to white, I’ll say right away, I didn’t succeed, I have large sugar, some kind of oak sugar, but in the finished Easter everything was as it should, dissolved. Add vanilla sugar and yolks. To make it convenient, I moved the oil mixture to the edge, left a little and rubbed it over the yolk. Add cottage cheese grated through a sieve (I beat it in a food processor with knives), raisins and candied fruits. Stir well, add whipped cream, stir from top to bottom. Cover the paste box with damp gauze, put the curd mass, cover with a saucer, put the load on top and put it in the refrigerator. I will stay overnight.

Mom has had this recipe for a long time. She worked with her in a polyclinic, 25-30 years ago, a nurse, grandmother Anya. A wonderful, kind woman. She grew up in a priest's family, she knew all the holidays, signs. And somehow on Easter I brought my mother just such a beanie, as she said, "My friend loved this one," I just tried aaaaa and fell in love with her. Baba Anya gave her mother a recipe, but you understand, she did not use the scales, everything was limited to the words "a little more than half a glass, sugar what would be sweet ... well, and so on" and she generally measured cottage cheese with zhmenka. Mom did of course, but I didn't really have such a description. And I accidentally found it in grams, compared it with my mother's notes and it turned out that this was my grandmother's recipe! Joy knew no bounds! Now I only do this.
