Wheat-rye buns with malt (oven)

Ingredients

2 cups wheat flour (380 grams)
1 cup rye flour (180 grams)
1.5 tsp yeast
1 glass of warm water - 350 ml. (looking at the kolobok)
2 tbsp. l cane sugar
3 tbsp. l vegetable oil
2 tbsp. l red malt
½ tsp salt

Cooking method

  • Pour boiling water over the malt, add 2 tablespoons of flour and put sugar in a warm place for 30 minutes.
  • Next we make a dough: We dilute yeast in warm water, 2 tbsp. l flour, 2 s. t. l of sugar, mix and leave for 10 minutes.
  • Mix wheat and rye flour in a bowl, add salt, stir, then add dough and malt mass, and knead until moderately developed gluten.
  • Knead the dough, not too soft, of medium hardness so that it is convenient to cut and shape buns.
  • We put the dough to come up 2.5 times, knead, pinch off small balls from the dough and in a circular motion with the right hand, crushing the edges of the dough to the middle, form our buns, put them in the oven for 40 minutes at 30 degrees.
  • We bake at 200 degrees - 10 minutes, and 15 minutes at 160 grams.
