Cooking method

  • 3. While the mushrooms are being prepared, finely chop the onion and grate the carrots on a coarse grater - the vegetables will be used for the cake layer. Set aside a little onion for the mushroom mince.

  • 4. Mushrooms are stewed, onions are added. Now you need to salt and pepper the mushrooms, add oatmeal and leave for 5 minutes.

  • 5. Fry prepared onions and carrots, divide into 4 parts.

  • 6. Add 1.5 cups of water to the mushroom mince, add flour and baking powder.

  • 7. During this time the potatoes are boiled, make a thick mashed potatoes. Do not drain all the water, leave a couple of spoons, salt.
  • 8. It is better to fry mushroom pancakes in a pancake pan, it has low sides, the pancake will be easier to turn over. I have a frying pan with a diameter of 18 cm. It turned out 5 pancakes.

  • Turn the pancake over only after it is well fried from the bottom, gently prying it with a spatula and turning it over with a sharp movement.

  • 9. Let's start assembling the cake. On a wide and flat plate in which you will serve the dish, put the lettuce leaves, put a pancake on top, brush with lean mayonnaise, put the fried onions with carrots; on top of the second pancake, the same until you use all the pancakes. Lubricate the top pancake only with mayonnaise.

  • 10. Coat the top and sides of the assembled cake with warm mashed potatoes and smooth with a flat knife. Decorate the snsizu around the entire perimeter with rings of black olives, slightly pressing them. Top with curly parsley around the perimeter. With ketchup, mark 8 sectors of the cake on top, (first outlining with a knife), as if you were drawing a snowflake. Then it is very convenient to cut off a piece along these sectors. Place a piece of cucumber, tomato, mushroom in the middle of each sector. Or decorate as you wish.

True, when I overcooked the mushrooms, I "blended" them. And I rubbed the boiled potatoes on a grater and mixed them with lean mayonnaise (finally, we also have it on sale). Made a double portion and baked in a large skillet. Everyone liked it very much!
