Kulich (cake) curd

Ingredients

flour 550 - 600 g
baking powder 1,5
sugar 250 g
cottage cheese (rub through a sieve and add 2 tablespoons of sour cream) 250 g
butter 350 g
chopped almonds 200 g
raisins, poured overnight with 200 ml of rum 250 g
orange and lemon candied fruits (can be replaced to taste with others) 50 g each
eggs 2 pcs.
zest and juice of 1 lemon
powdered sugar
cinnamon pods 2 pcs.

Cooking method

  • Whisk soft butter (250 g) with sugar, add eggs and beat further. Add cottage cheese, 1 tbsp. l. vanilla sugar, cinnamon, lemon juice and zest and beat.

  • Add baking powder to the flour and sift over the butter-egg-curd mass and knead the dough. Stir in almonds, candied fruits and raisins (the dough is tight)
  • Divide the dough into 2 parts, form 2 oval loaves, shape into loaves or muffins.
  • Bake for about an hour at 180C. While still warm, brush with plenty of melted butter (100 g) and sprinkle with a thick layer of icing sugar.
  • You can eat right after cooling, or you can wrap it in parchment or foil and let it "brew" in a cool place for a couple of days.
