Lean mushroom cutlets

Ingredients

boiled mushrooms 500gr
rice 100gr
bulb onions 1 PC.
salt pepper taste
oil rast 2 tbsp. l.
wheat flour for breading 50gr

Cooking method

  • Rice in this recipe plays the role of a binder instead of eggs, so it is better to take easy-boiled rice, such as Arborio. Cook porridge from it and mix with mushrooms fried with onions. I always have boiled wild mushrooms frozen since summer, but if you use fresh champignons, then I advise, firstly, to take not 500, but 700 grams of fresh mushrooms for this recipe and not to boil them, but immediately fry them with onions, and secondly, since they do not have the same "stickiness" as forest mushrooms, then after frying together with rice, grind them in a blender or pass through a meat grinder. Season with salt, pepper, form cutlets, roll in flour and fry until crisp.

Thank you ! This is (understandably) boiled beets. She is in perfect harmony with mushrooms and oh-oh-very much loved (since ancient kindergarten times) by my youngest daughter.

Prepared cutlets, very tasty, thanks, Larisa for the recipe. The only thing is that I chopped mushrooms and rice too hard in a blender, it turned out to be a liquid consistency, the cutlets did not hold their shape well when frying. But in this case, such a rice-mushroom mixture can be served as a pate.
