Ingredients

Dough:
sugar 0.5KG
draining. oil 250 gr.
eggs 5 pieces
yolks 2 pcs.
fresh yeast 75 gr.
baked milk 0,5 l
Dough:
all dough
vanilla sugar 15 gr.
candied fruit 100 g
flour 1.5KG
cognac 2 tbsp. l.
salt 0.5 tsp
raisins 100 g

Cooking method

  • 1. Beat eggs lightly with sugar.
  • 2. Cut the butter into pieces (you can slightly heat in the microwave).
  • 3. Add yeast diluted in warm milk.
  • (ATTENTION, in this recipe, flour is not added to the dough!)
  • 4. Leave in a warm place for 8-12 hours (or overnight).
  • 5. Soak candied fruits in cognac for 1 hour.
  • 6. After the dough rises (after 8-12 hours) add salt, raisins, candied fruits, vanilla sugar and flour.
  • 7. Knead a soft dough, dipping your hands in sunflower oil, do not add a lot of flour.
  • 8. Immediately after kneading, the dough can be laid out in pre-lubricated molds (lubricate only the bottom of the mold, if you lubricate the sides, the dough will have nothing to cling to and it will not rise well)
  • 9. Leave for proofing for an hour and a half in a warm place. You can stick a wooden splinter in the middle, bake with it, the dough will rise along it, and after baking, remove it.
  • 10. Bake at 180 degrees. until ready.
  • 11. Top with protein glaze.

Note

Easter cakes according to this recipe are very tender, airy and fragrant, they do not stale for a long time.

It is advisable to use only fresh yeast, dry ones have less lifting force and the dough may not fit well. But if there is absolutely no opportunity to purchase fresh yeast and use dry yeast. The ratio of live yeast to dry yeast is 1: 3

Handsomely! And candied fruits need to be adjusted to your liking. This year I used raisins, candied papaya and dried apricots. And I even forgot about vanillin. But this did not affect the taste in any way.
By the way, advice on storing Easter cakes: put them in a large saucepan on clean paper and close the lid

In general, without waiting for an answer, I baked it, since the dough was already ripe. I made half of the portion, kneaded in HP. Half an hour after the start of the batch, the stove was turned off and laid out in forms. I applied 1/3 of the shape, rose well, fragrant, beautiful. One was sampled - delicious!
