Whole Wheat Sesame Bread

Ingredients

Wholemeal flour 250 g
White bread flour 130 g
Water (black tea) 270 ml
Salt 1 1/2 tsp
Sugar (fructose) 1 1/2 tbsp. l.
Sesame oil 1 1/2 tbsp. l.
Dry yeast 1 tsp
Panifarin 1 1/2 tsp
Sesame 2 tbsp. l.

Cooking method

  • Last night I tried a whole grain oven with wheat flour and sesame seeds. For the first time, I got a result that pleased me. Light gray crumb, delicate sesame aroma and taste without the unpleasant aftertaste that followed me in previous experiments. True, I added one and a half teaspoons of panifarin, maybe that's why the bread is fluffy and light. And instead of water I took freshly brewed tea (a bag of good black tea for 270 g of water), I read somewhere that this can improve the taste. Maybe it turned out better because of the change in flour - I used to take coarse grinding from an Indian spice store, this time "Belovodye", they differ in color and structure.
  • Sesame was fried until light golden in measured one and a half tablespoons of sesame oil and added along with other ingredients.

Cooking program:

Mode - whole grain bread, small loaf.

To your health! With fructose, it seems to me, you get a fluffier dough - perhaps this is an illusion, but if you try to bake the same pecan cake with sugar and fructose, you will feel the difference. And more useful.

I had to add a few tablespoons of millet by eye. flour. One hour left, let's see what happens. The recipe itself is interesting, but next. just pour 200 ml of liquid, and then I'll just add to the bun ...

kipitka, I also have flour from Totem-spike, everything worked out, only I immediately reduced the amount of tea, to 250 ml, 250g coarse flour, and the first grade - 150g +1.5 tbsp. l. Everything else is prescription.

Water-250 ml. flour-totem-ear, oil-olive (I can imagine what a yummy with sesame seeds), added 2 tbsp during the kneading process. l. flour, one of each type.It turned out not only delicious, but also very beautiful - the roof is convex, smooth!
