Ingredients

Flour

2 - 2.5 tbsp.
Kefir 1 tbsp.
(240 ml)
Sugar 6 tbsp. l.
Vegetable oil 80 ml
Baking powder 2 tsp
Soda
(if the jam is sour - 0.5 tsp.)
1/3 tsp
Egg 2 pcs.
Thick jam, jam 160 g
Raisins, nuts, zest, cinnamon, vanilla

Cooking method

  • Eggs, kefir, jam, butter - beat.
  • Mix flour with baking soda and baking powder, sift.
  • Mix everything (without beating), the dough in the end is like thick sour cream.

Time for preparing:

minutes 30.

Cooking program:

Bake at 180-190 * C

Jam cupcake very much loved in my family, for its unobtrusive, delicate taste. It is not too greasy, not too sweet - very delicate.

Lately, I often bake these muffins from wholegrain flour, and from it, in my opinion, it is much tastier, there is some kind of nutty taste in the dough itself!

I don't use sugar in the recipe, only what is already in the jam (and it is homemade, cooked with a minimum amount, that is, almost without ...), dried fruits also give sweetness. Such an easy option "flies away" instantly !!!

There is quite a lot of acid here: kefir, sour jam. One baking powder cannot lift such a dough.

Cubic, I decided to make a milk frosting to emphasize the taste of the cake.
Chocolate glaze:
4 tbsp. l. Sahara,
3 tbsp. l. cocoa (I replaced it with milk powder),
6 tbsp. l. milk.
Boil the glaze, let it cool slightly and add 3 tbsp. l. draining. oils.
The recipe is good, the icing always turns out to be smooth and shiny (chocolate), and the milk frost turned out to be a little thin, I had to water it several times.
