Pickle with buckwheat

Ingredients

Salted cucumbers 2 pcs.
Onions and carrots 1 pc.
Potatoes 2 pcs.
Small turnip 1 PC.
Buckwheat 3 tbsp. l.
Parsley, salt, spices
Water or vegetable broth 1 l.
Sweet ketchup optional 1 tbsp. l.

Cooking method

  • Chop cucumbers, onions, carrots, turnips into thin strips, potatoes into slices. Slightly simmer onions and carrots in a skillet with vegetable broth or water. If we use ketchup, put it in the pan too. Place the cucumbers in a saucepan and cook for 5 minutes. Add buckwheat and potatoes, onions, carrots, turnips and cook for another 20 minutes. At the end of cooking, season with salt and pepper, add spices to taste and parsley. Serve with chopped fresh onion rings. Bon Appetit!

Recipe from the magazine "LG" with minor changes to my liking. The soup turned out to be very tasty. Next time I'll try with olives and lemon!
