Hunon (urama manty - steam roll)

Ingredients

Dough
Flour 500 gr.
Egg 1 PC.
Salt 1 tsp
Water 200 ml.
Filling
Chopped meat 800 - 1000 gr.
Onion 1 kg
Salt 1 tbsp. l
Pepper 1 tsp

Cooking method

  • Hunon is an Uzbek dish. Whatever they call him: khanuma, khanon, hunon. The modern name of its uram is manty, which literally means manty in the form of rolls (steam roll). At home, we just call this dish - lazy manti.
  • In fact, cooking them is very easy and quick. First, let's prepare the stuffing with minced meat, onions and spices. Instead of minced meat, you can use a filling of pumpkin, zucchini, potatoes with cracklings, etc. Prepare the dough, steep enough so that you can roll it out thinly (like on noodles). Divide the dough into three even balls, let it rest under a towel.
  • Hunon (urama manty - steam roll) Hunon (urama manty - steam roll)
  • We roll out a cake with a diameter of 50 - 55 cm - cut into two even halves, grease with any sauce, you can sour cream, kefir or mayonnaise.
  • We put the filling evenly, retreating from the edge of 0.5 cm.
  • Hunon (urama manty - steam roll) Hunon (urama manty - steam roll)
  • Pinching the edges and lightly tamping with palms, roll up a roll 4 - 5 cm wide. Then carefully fold it with an accordion 2 - 3 times on the palm of your hand, and place it on a greased steam sheet. Lubricate the joints with any oil, in this case they do not stick together.
  • Hunon (urama manty - steam roll) Hunon (urama manty - steam roll)
  • After 30 minutes, the roll is ready. We cut with a spatula into two or three pieces directly on the steam sheet and put on a dish, pouring with butter so that the rolls do not stick together. Can be put directly into portioned plates.

Why doesn't it work? Do you ship through the radical? If through it, then copy the topmost link and paste it into the line - the final photo - you may not see it - and you don't need to, click save and that's it.
And everything worked out!
Margit
Everything worked out, corrected the message.
And through the radical and fan studio I tried. It's a pity, there is no preview of the topic, you have to send it without seeing what's in there.
MariV
And through the preview - everything will fly off at all!

We call it Orama, I don’t cut a circle of dough, but completely wrap it in a roll, that is, the whole one, and I grease it with sunflower oil, then I put the minced meat, and on top of the minced meat, finely chopped green onions and roll up the roll

And I rolled the roll like this once, until my cousin from Tashkent came to visit and showed me this method. With this method, the roll is quietly placed on the sheet and does not stick to the top of the top steam sheet, and it cooks much faster. Sister, while her husband was alive, kept their own restaurant in Tashkent, and she taught me a lot.

MargitThank you very much for the recipe for this dish from our whole family! I did this before (without knowing what it was called), but the dough was much thicker and I did not cut the circle in diameter. I really, really liked your version. We ate two rolls at supper and I froze four. I cooked in a cartoon for a couple of 30 minutes, but my husband was late from work and it remained on heating for another 30 minutes. The sauce was from mayonnaise and adzhika raw with horseradish
Margit
Good health, metel_007!
I am very glad that you liked it!

I forgot to say that the flour was too much, I had to add about 50 ml of water. And then the HP kneaded the dough very hard, I turned it off and mixed it with my hands. Although the dough turned out to be very pleasant when rolling. It rolled out thinly, did not break and without much effort.

Flour is different everywhere, perhaps your flour is drier than mine, although I made the dough from Makfa flour. My advice: Adjust any new recipe to your flour the very first time. First, pour water, add all the ingredients, and do not add flour to 50 - 70 grams, and adjust during mixing. This advice once, here on the forum, gave Admin, helps a lot.
metel_007
Yes, I understand that, and I still wanted to do everything strictly according to the recipe. But this is not the point, the main thing is that it is tasty and I corrected the situation so that everything is OK !!! thanks again

Margit... and what kind of adaptation is this on the penultimate photo? never seen such a thing before. I dream that for steaming, since there are holes .. Is water poured inside? or how does it work? Interesting so ..

Aunt Besya, this is a sheet from a mantle cooker, I bought it in the "Gourmet - Dishes" store along with a saucepan. Here's a link, take a look:

Aunt Besya I have such a steamer-cooker Vitesse VS1018 Aceline

Hunon (urama manty - steam roll)

I bought it especially for mantas. Very handy, dishwasher safe, 9.2 liter saucepan

Now I'm all looking towards the steam roll
Margit
Lenusya
How lovely! I have never come across this one, otherwise I would not be able to pass by, I would definitely buy it! What I have never visited, now there is also a large 13 liters, with 4 separate grates, but I use it only when I cook manti for guests.
Aunt Besya
What's the trick, girls? Doesn't an ordinary steamer or cartoon with a steam mode go? Why a separate pot? Or just a hobbyist?
Margit
In a separate mantle cooker, you can cook a lot of mantis, and lay a new batch again, and it's a matter of habit, probably. Previously, there were no multicooker or double boiler.
If the electric steamer is large, then you can probably cook a lot in it, I have Brown, you won't go too far.
Aunt Besya
Now it is clear!!
Lenusya
Oh, Lenus, I was puzzled for something: manti is supposed to be cooked in a mantle, here. As far back as I can remember, they have always made them in a mantle cooker, only before they were aluminum.
And then - there are as many as 4 mugs !!! To wait 40 minutes in a slow cooker because of 5-6 pieces is not serious. This will not be enough even for two
Aunt Besya
Everything is clear with you !!! You are deviceaholics with a good appetite !!!

Ritochka, I accidentally came across your recipe! What a craftswoman you are! Such a thin, thin, tiny dough ...
The dough is now kneading HP for me, but my noodle cutter cannot roll out a large sheet of dough like this, because it’s a small one ... But I can’t roll out the dough with a rolling pin. I don’t have enough patience and skill ...
Thanks for the recipe, for your skill and generosity!

super!
matroskin_kot
Made today rolls - class !!!! I have never added an egg to the dough in manti. And today I made it according to the recipe - I really liked it. I just rolled it on a dough roller, and then connected the strips along the edge along the length. Fast and delicious.
Where is our Rita? Who knows? ... Not appearing on the site since April 22nd.
Galiya20
and I bought a long rolling pin specifically to roll the dough onto a roll, and I have a regular aluminum cooker for 4 circles, I don’t know how to cook a little, I lay 4 circles at once, because yummy is rare, I can eat a whole circle myself
naya
I urgently took the recipe to bookmarks, it's just a godsend for those who have little patience to sculpt manti (I'm talking about myself and my husband) and I love to eat them about this dish before THANKS !!!
Petrusha
Today I did this miracle! True, in the cartoon, I had to cook one circle twice (first one half, then the other). I ate half a circle at a time. My son has a bad dog, he ate and liked it, now I will cook for him often. Thanks to the author for such a detailed description of the dish!

Margit, Rita, please tell me how best to do it?

I want to cook these manti-rolls for dinner, but I will have to leave at 5, and we will come already at half past seven, when we have to eat for everyone .. should I now twist them, cook them, and then warm them up? .. or twist them, put them in the fridge, but how will we cook it? .. or twist it, put it in a double boiler, and call my son 40 minutes to turn it on? .. I don’t know how it will be better and tastier

Lisss's, Lyudochka With the answer, I see, I was late, but I will still answer. I believe that it is better to put the blanks on richly greased sheets of a double boiler and put them in the refrigerator. Your son, if he can, will turn on the mantle cooker before your arrival, and put the sheets as soon as the water boils (if the son is an adult).

Ritochka, hello again! I have consulted with the people here Wort, and did so - I rolled it up and cooked it in advance, and covered it with a microwave lid so it wouldn't get windy. came, warmed up and ate! And this is a completely magical dough, it has not dried up at all, has not become, as it happens in dumplings if they lie down, you know? the dough is great and the idea is great, everything was delicious! thank you for the recipe!

and we are with Susley they were afraid - the dough is thin, the minced meat is raw - they were afraid it would get wet? .. that's why we decided to cook! but next time I will do as you suggest!
Suslya
aha, the people in my face thought that it would be better that way, and Liss. agreed with
Margit
Luda, it’s right that we did it. And I thought that you like to eat freshly cooked, hot and hot, that's why I gave this advice.
Indeed, after all, usually hunon stays the next day, and even after a day and very much even nothing, it is still delicious! In this case, I lightly fry them in a pan with butter, I like it!
Lyudochka, if you still decide to do it according to my advice, then it is advisable to grease the sheets with melted fat, not butter. The fat will not have time to be absorbed into the dough, besides, it quickly freezes in the refrigerator, and the rolls will be well preserved. You can also lay them on a board, abundantly sprinkled with flour and also keep in the refrigerator.
Good luck and thanks for the report!

Gopher - Sharp, thank you for the timely assistance provided Lisss's

Rita! Today I prepared the roll for the second time, I was in a hurry and did not cut the circles. So I liked it better. It is very convenient in a slow cooker, just one circle enters exactly. And the roll itself is denser. Now I'm getting ready to see what happens. I'm waiting for a treat
And three rolls rolled around and put in the freezer the next day.
evrika_ea
Margit, Good day! Tell me how the quality of these inserts in the oven? I want to buy several of them separately and use them with my own pots. Do you get 3 of them if you bought a set? If it's not difficult, tell me what height is obtained from 3 tiers? And one more question - did you buy a manto-cooker in Kazan or in an online store?
