  • 300g water

  • The mixture is heated, stirring, to a temperature of 65C. Next, the tea leaves are placed in a warm oven to be saccharified for 1.5-2 hours at 63-65C. Then cold water is poured into the tea leaves to reduce the temperature of the tea leaves to 32-34C, the yeast is dissolved in it, flour is added and the dough is kneaded.

  • 400g bakery wheat flour 2 sec
  • 10g compressed yeast or 5g dry yeast
  • all saccharified tea leaves

  • 250g cold water

  • Everything is stirred until a homogeneous mass is obtained (within 5 minutes) and fermented for 3.5 hours. You get a dough.

  • Dough

  • 450g bakery wheat flour 2 sec
  • 15g salt

  • 49g sugar
  • 80g molasses
  • 50g raisins

  • 100-200g water

  • The finished dough is mixed with water, salt, sugar, and molasses, then flour is poured and the dough is kneaded. At the end of the batch, stir in the raisins. The dough is fermented for an hour.

  • The fermented dough is cut into portions, placed in molds, oiled or on boards covered with cloth and dusted with flour, or on sheets and sent for proofing. Duration of proofing is 50-55 minutes.

  • Before planting in the oven, the surface of the bread is moistened with water, sometimes lightly sprinkled with anise seeds. Baking is carried out with steam at 170-180C for 30-60 minutes.

Note

I bake bread only in the oven, I don't use bread makers and I don't like it!))
