vegetable oil 1 tbsp. l.
liquid ghee or melted butter for greasing

Cooking method

  • The pancakes are really solid, because they are solid and that's it. Because it is yeast, because about 3. It's not difficult, it just takes time for the yeast to do its "bubbly" business.
  • The recipe ended up in the Deli magazine. Such a small one, occupied an area of ​​5 by 7 cm, but turned out to be so tasty that my husband pointedly mumbled with his mouth full: “Oh yes!” M I liked these pancakes unconditionally. But the fluid had to be adjusted.
  • 1. So, dough, who would doubt it. For dough, dilute yeast in 1 glass of warm water, mix with 250 grams of flour and 1 tbsp. l. Sahara. If sourdough is available, add 200g of ripe non-acidic sourdough. This is optional, but starters will understand me. The sourdough gives the taste chic. Leave for 1 hour to increase by 2-3 times. If the container is in a warm place, things will go faster - 40 minutes will already be enough.
  • 2. Add 2 yolks, 1 tbsp. l. vegetable oil, 1 tbsp. l. sugar, a good pinch of salt, add another 250 grams of flour and knead the dough. It will be thick, closer to bread than pancake. I knead with a spoon / fork not to perfect, but ok. Another 40-50 minutes before lifting, about 1.5-2 times.
  • 3. Add warm milk (exactly warm). About 3.5 cups. You will need a mixer here. It is difficult to manually knead the thick yeast dough with liquid until smooth. The consistency of the dough should be thin, like for thin pancakes. Looks like whipped sour cream. Do not pour in all the milk at once. Flour in terms of moisture is different for everyone, so as not to overflow.
  • We leave for 20 minutes. Stir for another 10 minutes.
  • 4. Add whipped egg whites of 1 egg, mix gently and start baking immediately.

  • 5. Each baked pancake (a frying pan is slightly greased with a piece of lard, even salted, which is pinned on a fork) is greased with liquid ghee or melted butter. If you want sweet ones - sprinkle sugar on top, if your filling is supposed to be savory - do not sprinkle.

I am using a cast iron skillet. Great. 28 cm in diameter. I like to bake pancakes on thick and heavy, very hot pans. I think it's a pancake classic. To prevent them from sticking - a piece of bacon. In this case, grease the pancakes with oil anyway, so if the oil swells in the pan, it will be too much.

I don't follow these proportions. In addition, the count should go from the opposite. In the original recipe, live yeast is given - 20g. Dry can be calculated as you see fit based on the specified number of live.

I took 1.5 tsp. dry so that the process is active. You can reduce it.
