Ingredients

Cake:
bitter chocolate 350 g
Butter 250 g
Sugar 120 g
Cream 32% 125 g
Eggs 6 pcs.
Salt pinch
Glaze:
bitter chocolate 100 g
Cream 32% 125 g
Salt pinch

Cooking method

  • Cake:
  • 1. Boil the salted cream in a saucepan and pour over the chocolate. Stir until completely dissolved and stir in the soft butter until it dissolves in the mixture.
  • 2. Beat eggs and sugar in a mixer for 5 minutes until a stable, airy foam forms.
  • 3. Carefully combine both mixtures, pour onto a baking sheet, place in another larger baking sheet and fill with hot water.
  • 4. Bake at 150 degrees for 45 minutes, until the cake is formed.
  • 5. Cool to room temperature (it is recommended to keep the cake in the switched off oven for half an hour to an hour) and place in the refrigerator for several hours.
  • Glaze:
  • 6. Boil the salted cream in a saucepan, pour over the chocolate and stir until the chocolate is completely dissolved.
  • Assembly:
  • 7. Pour the mixture onto the cake (start in the middle and let the mixture spread evenly towards the edges). Shake slightly to release air bubbles.
  • 8. Place the cake back in the refrigerator for another 25-30 minutes for the coating to harden.

Chocolate sauce

Brown sugar - 1 tbsp. (Regular can be used)
Cocoa powder - 2/3 tbsp.
Instant coffee - 1 tsp
Cream (milk or milk + cream) - 1.5 tbsp.
Chocolate - 80 gr.
Vanillin - 0.5 tsp
Ground cinnamon - a pinch (optional)
Cognac - 1st tbsp. spoon (optional)
In a saucepan, whisk the brown sugar, cocoa powder, instant coffee, and milk (cream or cream mixed with milk).
Bring to a near boil, whisking frequently, and cook for 4 minutes.
Remove from heat and stir in the chopped chocolate until smooth.
Stir in vanillin and a pinch of ground cinnamon and cognac.

This sauce is stored for a long time in the refrigerator))

The cake turned out to be insanely delicious, WITHOUT FLOUR. Creamy texture, chocolate ice cream flavor. There is only one drawback - extremely high-calorie !!!

I found the recipe for this cake back in the fall. Has baked already several times. Really delicious and chocolatey. There is also chocolate (dear mother) Salt must be added, there is something in it. I completely agree with Lelechka84 that the cake is very high in calories. But yummyaaaa.
