Wheat bread with whole grain and sourdough cottage cheese

Ingredients

Flax seeds 20g.
Water 20g.
Dough:
Rye sourdough (100%) 250g.
Fat-free pasty cottage cheese ("Ostankinsky) 100g.
Water 150g.
Syrup 1 st. l.
Vegetable oil 1 st. l.
Wheat flour 300g.
Wheat grains 100g.
Salt 1.5h l.

Cooking method

  • Soak flax seeds in 20g. water, refrigerate overnight. The water should be completely absorbed.

  • Grind wheat grains in a coffee grinder.

  • Mix the leaven with water, molasses, rast. butter, cottage cheese. Pour HP into the bucket. There are also flax seeds, flour, salt. Dough program. Enough for mixing 20 minutes. "Kolobok" is soft, sticky:

  • After mixing the HP, turn it off and leave for 2 hours. After a while, put the dough on the table with wet hands:

  • Form a ball. Place in a greased mold:

  • Cover with a towel and place in a warm place for 2x magnification. It took me 2.5 hours.

  • Sprinkle with water before baking.

  • Bake in preheated to 220C-15 minutes, then reduce the temperature to 200 and another 20 minutes.

  • Cool on a wire rack. Grease with vegetable oil if desired.

I will also ask, can you - do you think you can bake only with whole grain flour or still put white?

I don't bake sourdough in KhP. This is a delicate matter, you need to constantly monitor the process. If anything, correct it right away. HP does not give such an opportunity. And you need to put the bread in a hot oven ... while the HP heats up!

danuca , I usually do not bring to such a state. My starter is kept in the refrigerator. Before baking, I take it out, separate 100g, feed it, wait for an increase of 2-2.5 times and knead the dough. The rise time depends on many factors, including the air temperature. It's hot in my kitchen and it usually takes 3-4 hours.
