Wheat bread on kefir with cheese in a bread maker

Ingredients

Live yeast 15g (crumble along the bottom of the bucket)
Wheat flour 525g
Sugar 2st. l.
Salt 2h l.
Cheese (on a coarse grater) 50g
Olive oil 2st. l.
Old kefir 190ml
Water 130ml

Cooking method

  • Put all the ingredients in the bucket of the bread machine according to the instructions for it.
  • Basic program.
  • Wheat bread on kefir with cheese in a bread maker

Time for preparing:

4 hours

Basic, size L, medium crust.

Note

If your bread maker does not have a preliminary temperature equalization (like I have in Panasonic), then you need to put the yeast in water. Warm water.
The bread turned out to be very high, even crushed by the lid. If the cheese is salty, then the salt should be reduced to 1.5 tsp.

Already twice baked bread according to this recipe, well, I really, really like it!
Yesterday I added 2 finely chopped garlic cloves to the dough and cut a half of fresh red bell pepper, poured 2 tablespoons of dry parsley into the dough. And I forgot to put in vegetable oil, but the bread turned out to be delicious !!! So even, rosy, tall, and the texture of the flesh is especially good - layered fluffy. Instead of kefir, I took fermented baked milk. This taste turned out to be balanced both in salt-sugar and in aroma!
Now this bread will be a favorite of our family!

By the way, I recently made this bread with processed cheese Druzhba (80 g). I rubbed it on a grater with thin plastics. It turned out very well, only slightly corrected the bun. Looks exactly the same as in your photo. And in your recipe I also liked the fact that there is not much cheese there in quantity, which means that bread can be baked more often, because hard cheese is not very cheap, this also matters to me.

I understand that you wanted to put the bread in a sponge way? Then it was necessary to knead the dough on dumplings from yeast, half the flour and liquid 3/4 of the recipe, for about 10 minutes. Press the stop, put everything else according to the recipe, let the yeast activate for about 15-20 minutes and turn on the main program for 1 hour 55 minutes, I I still put a dark crust on such a bread (then it will light up for 2 hours) and I use live yeast-15g per 500g of flour. Well, when there is not 2.5 hours in reserve, but 4, then I just put the Main 4 hours and do not bother. I, too, when adding flour improver, the rolls were undermined on one side, but I add it to not very high-quality flour. So I somehow bought two packs of Makfa - the flour turned out to be very good, I bought flour of the same kind in the same store a couple of days later, and the flour is much worse, apparently, another batch has already arrived, do not throw it away! So I'm improving.
Despite blowing up the roof, bread with flour improver turns out to be tastier and more luxuriant.
But I added both hard and soft cheese - the result is always wonderful!
I always call this bread "bread from Andreevna", my mom was called that, so the name was easily remembered, and I love this recipe very much, I bake it more often than others.

You can add any cheese to the dough at any stage of kneading. The dough will be slightly different from when the cheese is added and it should be borne in mind that the dough may be softer than usual, depending on the moisture content of the cheese itself.
You don't need to count cheese against other ingredients, then adjust the flour / liquid balance if necessary
