Ingredients

Chicken bouillon 7-8 glasses
Bulb onions 300 g
Wheat flour 1 tbsp. l
Eggs (yolks) 3-4
Cilantro greens 3-4 branches
Lemon juice or wine vinegar 1-2 tbsp. l
Black pepper 1/4 tsp
Cinnamon 1/2 tsp
Ground coriander 1/2 tsp
Saffron 1/2 tsp
Salt taste

Cooking method

  • Boil rich chicken broth.
  • Remove the chicken fat from the broth, melt in a pan and simmer finely chopped onions in it until soft. Sprinkle the onion with wheat flour, if there is not enough fat, add the melted butter and simmer for another 5 minutes. Combine with chicken broth and cook over low heat.
  • After 30 minutes, add cinnamon, crushed coriander seeds, salt to the soup and cook for another 10 minutes.
  • After that, remove the soup from heat, remove the sprigs of herbs and stir in the yolks diluted with a small amount of broth.
  • Add saffron infusion, natural wine vinegar or lemon juice, put back on the stove, bring to a boil, but do not boil. Remove from heat.
  • Georgian lavash goes with the soup, or you can serve croutons with cheese.

Note

Very nutritious tasty soup. It is especially good in winter when you want to warm up and eat something hot and satisfying. At the same time, it is quite well absorbed and does not cause severity.
Chicken broth can be cooked from either chicken or chicken giblets.
