What a cool corn bread turned out
SUNNY, turmeric did its job and did not affect the taste:
Corn bread (bread maker)
Thanks for the recipe!
Levik
Fugasochka, thanks for the recipe!
The bread is great!
There was no milk ... It turned out kefir with beer: 240 + 130. She took flour to the maximum, that is, 500 + 120.
Butter replaced vegetable oil - 30 ml.
During the kneading, I added a little water. But the HP did not cope and only partially mixed it. Restart the program. After the second kneading, the bun looked a little bit garish, but that didn't stop the bread from rising well and baking completely!
We eat everything, everyone likes it !!!
Davli
thank you very much for the recipe! that's such a handsome man

Corn bread (bread maker)
Corn bread (bread maker)

used a recipe for 450 wheat and 100 corn. dry yeast one teaspoon (not one and a half)

here is the output weight
Corn bread (bread maker)

adjusting the weighing of flour, as always, 5 grams (according to the passport, they lie by 1 g, but having experience with such scales it is better to weigh not 451 g, but 455 g and there will be happiness)

medium crust, size L basic mode. in reality it is lighter, the fotik on the sotik lies
Aksinka
She baked bread. I took flour in the ratio of 500-100. The roof did not collapse, but it turned out along "valleys and hills". Went up very beautiful. The bread is delicious, added 0.3 tsp for "joy". kukurma.
What caused the roof to fail? Although its hilly taste did not affect the taste ...
Luybasha
Thanks for the recipe for this bread! The taste is just awesome. Only my roof fell, I still had to add a couple of tablespoons of flour, I think so, but the taste did not reflect a bit.
Faina
After Darnitskiy I tried to bake corn. It also turned out, but sagged a little. And the taste is awesome! Thank you so much for the recipe !!!

And for the second time I get a flat wavy top of bread: it settles in the first 10 minutes of baking. The liquid was 310 ml for 420 g of wheat flour and 80 g of corn-bun was barely gathered, yeast 1 tsp ... What is the reason ??
Falcon flour ... The feeling that the whole bread is squeezed during baking ...
xomka
it is still cooling down, haven't tasted how it tastes. the crust did not fail, cut it, there are such dense holes inside, but it looks damp in places, although I did it completely according to the recipe.
and also a heavy loaf by weight)

You should not cut the bread hot, it will always be damp and moist - you need to wait until the bread cools down to room temperature! Then the taste of the bread will appear!

If the crumb is damp in cold bread, it means there is more water in the dough than necessary for the flour / liquid balance.

Weight is heavy as different flours weigh differently
xomka
Admin, thanks, I will keep in mind for the future
it just seemed to me that the bread was not baked too much, so I got into the hot one))
in the morning I ate it today - mmmm, delicious! true, not as perforated as in the pictures of other members of the forum, but I think it’s partly in yeast (I didn’t use the saf moment, which made all the previous bread rolls), and partly in the fact that I didn’t drown butter in milk, as the author of the recipe writes.
by the way, I wanted to ask. the fugasca writes: sows cornmeal directly onto the liquid. and when to lay the yeast? on top of flour?
Davli
xomka it all depends on the model of your stove, it is better to do as the manufacturer recommends. for example, Panasonic - first yeast, flour, sugar, salt, and only then water. in the version that they describe, a "nest" is made in the flour and yeast there.
tatjanka
Thanks for the delicious bread! : flowers: This is not the first time I have baked because one of my favorites. But this time I added rice flour, etc.because it lies idle, having reduced the amount of wheat and bread did not affect the taste in any way Corn bread (bread maker)Corn bread (bread maker)

the first times the roof did not come out very well, but gradually everything began to come out perfectly. everyone notes that the bread has a cool taste like a butter roll. does not dry for a long time and is perfectly cut. bright egg color - thanks to saffron)))

I did everything technologically as in the recipe. all heated liquid with oil warmed in the microwave. corn flour forward. whole grain pitch, medium crust

So my roof has fallen, although everything seemed to be going beautifully, and then ...
It seems that I did everything according to technology.

It seems that I did everything according to technology.

So not everything ...

The roof usually falls in two cases:
- a lot of yeast
- a lot of liquid

Thank you!

Yesterday we baked this bread. The recipe was slightly changed. Instead of ordinary butter, they took ghee, whole milk 50/50 and sour 370 g, added 1 egg, 100 grams of walnuts. The dough seemed liquid, we added another 50-80 grams of flour per eye already during the work of the HP. The dough still seemed runny. Since this is our 4th bread, we decided that mistakes were forgivable and wished ourselves good luck. The dough rose at the end and very well. Baked on whole grain mode for 4 hours. It turned out to be simply delicious bread weighing 1450 g.
Today they put more, but on the basic program and a little less flour. Let's see what happens

Good afternoon to all members of the forum! I'm a beginner. baker. I would also like to try cornbread !!! Tell me, pliz, this recipe is suitable for all HP and is it necessary to lay bulk products in liquid products or it is possible vice versa (in my bread maker, liquid is poured onto dry ones)

The recipe is suitable for all HP. Since you have liquid on top, does it mean Panasonic? It is generally possible to lay in any order, but it is still better to follow the manufacturer's recommendations. Everything will work out!

Today I baked breads according to your technology. Very tasty, but the dough did not rise very much. What could be the reason? Is there something wrong with the yeast?

Hello everyone! Mastering the Kenwood Bread Maker. So I wanted cornbread - I read it, saw enough of the photos - but ...did not work (((At first it rose, and when it was baked, it was opal ..., the crust cracked on top ... I haven't tasted it yet. It seems everything is according to the recipe, but somewhere a puncture ...

The puncture is apparently in the mismatch of the flour / liquid balance, we read this topic Bread rises, but falls inside. Causes. https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=7690.0
zov
Thank you! I will figure it out (((I put only kefir (without milk). Liquids are no larger than in the recipe ... I wonder if you can do it on water and without an egg - the fast begins ...)
Admin

You can do it quite simply: flour, water, salt, yeast - and the bread will turn out super!
zov
Thank you. I'll try, but it's corn.
tan`chik74
Guys, did anyone bake such bread in a Panasonic SD-ZB2502? As a result? Have you changed anything in the recipe? What program did you bake on? Thanks for answers!
zov
Corn bread (bread maker).

Here is such a corn bread I got on the water. Delicious, rose well, but the roof is not even yet - bumps. Probably a lot of flour? Although the bun was like a good one.
Mona1
I just put this bread in the oven. With a timer for the night. I bake it for the first time, and even my live yeast is over, I bake it on SAF-Levure (1 tsp). I made a dough, kneaded on the Pelmeni mode for 5 minutes. and then with a delay of 2 hours, adding all the other ingredients, turned on the Basic mode. The recipe was counted at 330 wheat. flour + 70 corn, added 2/3 tsp. turmeric. Whole - in sour milk. Tomorrow morning there will be a surprise for the whole family. And now - sleep!
Mona1
Well, that's the "surprise". The roof collapsed. I noticed, by the clock on the microwave, that at night the light was turned off, but, apparently, not for long, since the cycle in HP was not canceled. Maybe this outage affected the roof? I put it in the dough: I wrote about flour, 330 + 70 g, sour milk 280 g, butter. 30 g, sea salt 1 tsp., Sugar 1.5 tbsp. l. Yeast SAF-Levure 1 tsp - into the dough. I put it on a timer with 2 hours of delay. Maybe the levyur shouldn't be done like that or you still need less for this amount of flour?
The taste turned out to be bland, either there is more salt, or sugar, or maybe it should be like that. This is the first time I taste something with cornmeal. In general, so far my family has not noticed any special enthusiasm, but I think that most likely this is because of my curvature so far. Tell me what to fix.

Mona, this is to be expected, bread with the addition of corn flour is bland, and not everyone likes it, the flour is dry and does not have gluten (gluten).
The dough also requires careful kneading.
If you like the bread, then try to make friends with the dough, corn flour, find the flour / liquid balance, you will have to work with this.

Yes, thanks, I will try again, I am not one of those who stop half way.

I made according to the recipe: Kefir 170ml + milk 200ml.
Corn flour 100g + wheat flour 450g
Oil drain. 30gr.
Sugar 2 tbsp. l.
Salt 1.5 tsp l.
Yeast 1.5 h. l.
Turmeric 1h l.
Grated cheese 150g.
Dissolve butter, salt and sugar in milk. Sift the cornmeal first into the liquid.
Basic mode, size L, dark crust.

Grated cheese 150g.
And how much does the taste change if you add cheese? And do you add it immediately or after the first batch? If it is impossible in this thread, can you drop me an answer in a personal message?

The cheese was almost not felt. Probably it should be put in 2 times more. I grated it coarsely and immediately threw it into the general mixture. Next time I'll try to put more.

Judging by the photo, it is better to grate the cheese on a fine grater and start at the beginning of kneading the dough, then the cheese will mix well in the dough

I baked. I have a Panasonic 2501. On the previous page, my post with a photo of bread. The roof caved in, did not do exactly as in the recipe, you have to think about what to fix. But, in truth, this is the first time I taste bread with corn flour, so I somehow don't taste very good. But my husband likes it.

I have one cornmeal bread in my recipe book ...
that's just a little bit of it ...
so I would like to add more of it and try what will come of it ...
I don’t know, maybe remember when the USSR had YELLOW loaves (also with corn flour) ... that's how they say you want NOSTALGIA ...
Admin

Corn flour must be added to the dough very carefully, there is no gluten (gluten) in it, the dough can crumble in the finished product.

But don't be afraid to try!
Bake for health, gradually increasing the flour until you achieve the desired result

I was also thinking about how to increase it ...
but before starting, I came across this topic, so I decided to take an interest ... who can, what has already been tried ...)))
okay, how will I conduct the experiment, I will write about the result)

Why did I get up very badly? She took proven products, baked not a single bread with them! but it’s just the corn yeast that grew only on half a bucket, the yeast definitely had nothing to do with it, I baked wheat with them a couple of days ago. so what is the reason ???

The bread is excellent, albeit low, with a delicate aromatic crumb, does not crumble. Cooked with fresh yeast on the Whole Grain Bread program, the crust is the most crispy. The output was 882.
Thanks for the recipe!

Thanks for the recipe! Well risen, airy, delicious! I used pressed yeast and added an egg, baked in the main mode, the Panasonic 2501 oven. I did not control the gingerbread man, because there was no way.
The bread did not crumble
