Fruit pie "Australian"

Ingredients

Mix of dried fruits (prunes, dried apricots, raisins, apples, pears) 450 g
Butter 150 g
Water 250 g
Sugar 100 g
Eggs 2 pcs.
Lemon zest 1/2 tsp
Vanilla sugar 1 pack.
Cinnamon 1 tsp
Soda 1/2 tsp
Wheat flour 300 g
Dry yeast 1 tsp

Cooking method

  • Rinse dried fruits, put in a saucepan, add butter, sugar, vanilla sugar, cinnamon, zest. Cover with water, cook for 10 minutes. Cool down.
  • Beat the eggs. Add to cooled fruits. Mix.
  • Mix flour with soda and yeast. Add portions to fruit, mix thoroughly. The mass is quite thick.
  • Cover the form (I have d24cm) with paper, grease the paper with vegetable oil. Lay out the dough. Flatten.
  • Bake in an oven preheated to 200C for about 1 hour. I got it at 200C-30 minutes, then it seemed to me that the top was very fried, I reduced the temperature to 180C and held it for another 20 minutes.
  • Cool on a wire rack. Chop for 2 or 3 days (if there is something to cut)

Sugar increased - poured 150 g. I have a sweet tooth. From dried fruits, there were only ~ 90 g of apples and pears, the rest in equal shares. Dried apricots and prunes were cut into 4-6 parts. And the top turned out to be VERY uneven. But it doesn't spoil the appearance (especially the taste).
