Crispy egg croquettes

Ingredients

Hard-boiled and chopped eggs 4 things.
Ham (mushrooms) or fried bacon, minced - optional 60g
Eggs 2 pcs.
Butter 30g
Flour 60g
Milk 150 ml
Salt
Pepper
Dry bread crumbs 30g
Deep fat
Tomato sauce for serving croquettes to the table
Tomatoes 750g
Finely chopped onion 1 PC
Olive oil 1 tbsp. l.
Garlic (optional) 1 clove
Chopped parsley 1h l.
Blend of basil, marjoram, thyme 1 tsp
Sugar (optional) 1-2 tsp

Cooking method

  • Fried eggs in breadcrumbs are crispy on the outside but appetizingly tender on the inside.


  • 1. Preparation of eggs


  • Peel tough eggs and chop into even pieces.


  • 2. Making the sauce


  • Dissolve the butter in a saucepan, add 30g flour, then gradually pour in the milk, cook for 5 to 10 minutes, until the sauce thickens. Remove the saucepan from heat and beat in raw egg yolk. Season with salt and pepper to taste, if desired, add grated nutmeg or a pinch of cayenne pepper.


  • 3. Adding eggs.


  • Stir in chopped egg pieces and, optionally, ham or bacon or mushrooms into the hot sauce. Cool the mixture completely. Optionally, when the mixture has cooled sufficiently, the pan can be refrigerated to help solidify the mixture faster.


  • 4. Shaping croquettes.


  • As you take a spoonful of chilled egg and sauce mixture, place each serving in the remaining flour, then dip in the beaten egg and then in the bread crumbs. Roll the croquette well in the crumbs so that they completely stick around it, press lightly. Leave the croquettes for a few minutes so that the sprinkles adhere flat.more precisely.


  • 5. Frying croquettes


  • Pour 1 cm of vegetable oil into the pan - the oil should reach half the side of the croquette. Fry on both sides until golden brown. Pat dry on a paper towel.


  • 6. Serving croquettes to the table


  • Serve as they are, or optionally with tomato sauce, served separately: to avoid spoiling the crisp, do not add tomato sauce to the croquettes.


  • Aromatic tomato sauce


  • Saute the onions in oil until soft but not brown. Add garlic and herbs, salt, pepper, some sugar and tomato quarters. Simmer over low heat for 20-30 minutes, until the tomatoes turn into gruel. Rub through a sieve using a wooden spoon. Cook the sauce over medium heat, stirring occasionally, until it has the desired consistency.
