Tart with pears and chocolate

Ingredients

Dough
Flour 250 g
Butter 100 g
Yolk 1 PC.
Sugar 2 tbsp. l.
Filling
Pears 3-4 pcs.
Dark chocolate (65-70% cocoa) 100 g
Cream
Cream 150 ml
Egg 2 pcs.
Vanilla sugar 2 sachets

Cooking method

  • Combine butter (it should be slightly soft), yolk, sugar and 1 tbsp. l. cold water. Sift flour onto the table. Make a depression in the center, pour the mixture into it and knead the dough. If the dough is too crumbly, add 1 more tbsp. l. water. The dough should be soft and not sticky to your hands. Roll the dough into a ball, wrap it in foil and refrigerate for 15 minutes.
  • Roll out the dough on the table, using as little flour as possible. Place the dough in a mold (diameter 26 cm) and press lightly against the walls. Pierce the base with a fork and cool in the refrigerator for another 15 minutes. Preheat the oven to 210 degrees C.
  • For the cream, beat eggs, cream and vanilla sugar.
  • Halve pears, peel and seed. Cut the pears into thin slices across, keeping their shape.
  • Sprinkle the chilled dough with chocolate, arrange the pears on the chocolate like flower petals. Cover with cream.
  • Place the cake pan on a baking sheet and bake for 10 minutes. Reduce the oven temperature to 180 degrees C and bake for another 20-25 minutes until golden brown.
