Lemon-ginger muffins

Ingredients

flour 3 glasses
fresh ginger root 4 cm
lemon 1 PC.
sugar 1 glass
butter 200 g
egg 2 pieces
natural yoghurt 300 ml
baking powder 1 tbsp. l.
soda 0.5 tsp
salt 0.5 tsp
FOR GLAZE
powdered sugar 1 glass
lemon juice 3 tbsp. l.

Cooking method

  • Mix flour, baking powder, baking soda, salt.

  • Cut the lemon zest with a vegetable peeling knife, cut it into pieces. Grind the zest with cubes of ginger, 1/4 cup sugar in a food processor or blender.

  • Beat the softened butter with the remaining sugar until fluffy. Continuing to beat, add eggs one at a time, add lemon-ginger mixture. Then, in several steps, alternately add the mixture of dry ingredients and yogurt.

  • Grease muffin tins with oil, distribute the dough evenly. Bake in an oven preheated to 200 degrees until golden brown, 20-25 minutes. Place on a wire rack.

  • Prepare the icing: grind the icing sugar with lemon juice. Apply the glaze to the muffins while they are still warm.

Note

Recipe from Gastronom magazine (April 2008). Delicious muffins, only the icing is too sour. You probably need to mix lemon juice with water.

From experience I will say, I thought that baking is only for adults - ginger after all, so I took a fresh root, as it is written, and even more, so as not to play with lemon, I took lemon sugar, accordingly reducing the sugar in the recipe (this is for you both zest and juice) ...
Result - children dared faster than adults
Today these are the most delicious muffins, and I already know a dozen and a half recipes ...
