Peach omelet

Ingredients

Peach
it is better to take a ripe but firm peach
1 PC.
Eggs 3 pcs.
Thick sour cream
Can be replaced with 50 ml. milk, cream
2-3 st. l.
with top
Butter for frying 15-20 g
Salt, sugar taste

Cooking method

  • It is better to use thick sour cream, the omelet will be thicker and taller.
  • Heat oil in a frying pan, spread peaches in slices, fry for a short time on one side. Fry quickly to form a golden brown crust.
  • Sprinkle a little sugar to caramelize the peaches, turn over to the other side, fill with egg mass. Beat eggs with sour cream until foamy, add a little to taste.
  • Now we are waiting for the edges of the omelet to grab, and then with a fork moving the edges a little to the center, a new portion of the liquid egg mass penetrates into the empty space and is fried.
  • In the center, I also gradually pierce the omelet so that the liquid goes down and baked.

Note

The omelet is a little wavy, baked, not flat.
All this is done very quickly.
The omelet is served hot. You can throw a handful of berries on top - it turns out delicious!
When serving, you can sprinkle with icing sugar on a plate!
