  • Now I cut up the kidneys, cut into slices, cut off fat, films, veins, ducts.

  • The weight of the kidneys before processing is 440 grams, after processing there are 360 ​​grams, and after cooking it is even less - only 200 grams. But this is quite enough for me for a pickle.
  • Now we start to cook the kidneys.
  • I wash the kidneys with cold water.
  • I pour water into a ladle, put it on the fire and bring it to a boil. No need to salt!
  • I put the kidneys in boiling water, bring them to a boil, mix them, because during the first cooking a huge amount of dirty foam is released, which even had to be washed properly.
  • As soon as the kidneys have boiled, I remove them from the heat and pour them into a colander, transfer the kidneys to a bowl and rinse them well with cold water.
  • Again I pour cold water into a ladle, let it boil and again lower the kidneys into boiling water, and again bring it to a boil, remove it and wash it.
  • Thus, you need to do it three times.
  • After the third brewing of the kidneys, the water will already look like this - clean.
  • Cooking beef kidneys
  • I drain the water, put the ready-made kidneys into a bowl, everything turned out - nothing from the kidneys. The buds were of high quality, so there were no specific smells and taste from them during cooking and after.
  • The kidneys cannot be cooked for a long time, like seafood. The kidneys are subject to rapid heat treatment, otherwise they will be tough, like rubber.
  • Now the kidneys can be used further as intended.

I will cook the pickle with beef kidneys.
But the kidneys are a problem for many…. they are too specific when cooking.
For me, this was a problem until some time, until I figured out which kidneys and where to buy and how to cook them.

I buy kidneys only on the market, from trusted sellers and only beef.

This is what the market beef kidneys look like. They are completely fresh, processed and the film has already been removed from them, there is no smell at all.
