Table marmalade made from salted lemons.

Ingredients

Lemons 8 pcs.
Salt 2 tbsp. l.
Kishmish 500 g
Chopped fresh ginger 1 tbsp. l.
Ground hot chili or cayenne pepper 1 tsp
Garlic cloves (knead) 4 things.
Cider vinegar 300 ml
Lightly caramelized granulated sugar
(replace with brown sugar)
750 g
Grated horseradish (fresh is best) 2 tsp

Cooking method

  • I give the recipe completely as the author of the recipe - a portion of about 8-10 250 ml jars is obtained. I usually do half serving.
  • Cut the lemons into 8 slices, remove the seeds, sprinkle with salt and keep in the refrigerator for 1.5 days, stirring occasionally.
  • Strain lemons and save liquid.
  • Pass the lemon wedges through the largest knives in a meat grinder and combine with the remaining liquid and all other ingredients in a saucepan.
  • Simmer until a thick mixture, stirring constantly.
  • Cooking time is about 1-1.5 hours. I focus on boiling off the liquid so that it does not stick to the bottom of the pan and does not burn. One hour is usually sufficient.
  • Arrange in jars, tighten the lids and put to ripen.
  • Of course, you can use it right away, but as the author writes, the taste is acquired over time.

The taste of these pickles is such that the author of the recipe cannot but make a few comments; he thinks that he uses a slightly unusual combination of ingredients, but the result exceeds all expectations. The product is served with cold meat. Pick lemons with thin peel and, if possible, without grains. The product is excellently preserved and tastes best 2 months after cooking.

I completely agree with this - the longer the marmalade is (aged), the better it tastes.

I call this recipe not pickles, but table marmalade. Perfectly goes with meat, especially white, chicken and just for bread.
If you want to work up your appetite - then a sandwich - for yourself and your guests!
