Firstly, vegetables absorb too much oil during frying, and secondly, the very process of standing for a long time over the cauldron and endless stirring gets on my nerves.
But all this is in the past. Now you can enjoy your favorite meal, cooked quickly and with a minimum of oil.

Eggplant or squash caviar in the oven

4 tablespoons vegetable oil
1 kg eggplant or zucchini
3 sweet bell peppers
2 large onions
1 large carrot
piece of celery root (optional)
about 800 grams of soft red tomatoes (in the absence of such, I used peeled tomatoes from a jar in my own juice)
2-4 cloves of garlic
salt, sugar, pepper to taste

Pour grows into a baking sheet with a non-stick coating and high enough sides. oil. Cut the courgettes or eggplants into cubes (I do not peel, but if you want, please), pour into a baking sheet, stir and place in an oven preheated to 200 ° (convection 180 °). As soon as the vegetables settle and begin to acquire a ruddy color, add the diced bell peppers, mix and put in the oven again. Grate carrots and celery, cut onions into cubes. When the pepper is soft, add the prepared onions, carrots and celery to a baking sheet, mix again and place in the oven.
Scald the tomatoes with boiling water, remove the skin, cut into cubes, add to a baking sheet, stir and bake until the liquid evaporates. Stir a couple of times in the process.
Put the prepared vegetables in a saucepan, "blender", season. I add minced garlic to the hot caviar, but if you want something spicy and you don't mind the smell of garlic, add the garlic to the chilled caviar.
The result is an almost full 2-liter saucepan.
