Ingredients

pig tongue 4
cloves of garlic 4-5
lavrushka leaves 4-5
mixture of "5 peppers" with peas 1 tbsp
salt taste
dried thyme 1 tsp

Cooking method

  • Crush the pepper in a mortar, break the lavrushka and stir with the thyme. Fold the foil in several layers, put 1/2 of the mixture on it. Squeeze the garlic through a press and mix with salt, smear the tongues with the resulting gruel. Place the tongues on the foil, sprinkling the second 1/2 of the spice mixture on top. Wrap the foil tightly with an envelope, leave to marinate for at least 1 hour.
  • Bake in the oven on a wire rack for about 1.5 hours at 190 C.
  • Since we bake on a wire rack, we wrap the foil tightly, gently seam up, so as not to wash the oven from the leaked juice
  • We take out the finished tongues from the foil, clean off the remaining spices and let them cool completely in a sealed container or wrapped in foil. The skin can not be peeled off, it is almost not felt, only cut off a little at the base of the tongue.

artisan, you can easily leave it in the marinade in the refrigerator until tomorrow. From the morning to the oven. From the ready-made ones, you will clean off the remnants of the marinade and the whole company has covered 2-3 layers of foil, put it in a cool place (I have a glazed balcony) before the holiday. Cut it thinly, but the sauce is better separately. The combination of mayonnaise with horseradish is excellent, and for my taste without cheese. Who needs to dip / smear. The ready-made tongues have a well-saturated taste in themselves after the spices.
I always make in a specially designed baking dish with an insert grid. I think if the marinade is made only from spices, there may not be enough own juice of the tongues and the bottom will fry. Stеrn, for example, did a little in a different marinade and she had enough gravy, baked in the sleeve on the back.

I brought my thanks for the idea with baked tongues !!! Everything turned out great, soft and tasty. I took off the skin because it was so easy to take off !!!!! I could not resist not to take it off. I wrapped it in two layers of foil, it is so thin now ... I put ice cream sticks on a baking sheet, and then I laid everything with round pieces of foil from sweets with an arrow (well, I'm a bun, a bun, I don't throw anything away !!!). The bottom is not burnt at all !!!
I really wanted to bring a photo ... but it turned out to be a very bad quality, so the next time I put the photo on the queue, at the beginning of April (there will be a reason !!!)
