Muffins with raisins and bran

Ingredients

Butter 4 tbsp. l.
Wheat flour 2/3 cup
Whole grain flour 1/2 cup
Soda 1/2 tsp
Salt pinch
Ground cinnamon 1 tsp
Bran 1/2 cup
Raisins 1/2 cup
Dark brown sugar 1/3 cup
Granulated sugar 1/4 cup
Egg 1 PC.
Buttermilk 1 glass
Juice of half a lemon

Cooking method

  • Put butter in a saucepan and melt over low heat.

  • Sift flour, baking soda, salt and cinnamon into a bowl. Add bran, raisins and both sugar. To stir thoroughly.

  • In another bowl, combine egg, buttermilk, lemon juice and melted butter.

  • pour the liquid portion over the dry ingredients. Stir quickly and gently, but not until smooth.

  • Place dough in oiled muffin tins, filling almost to the brim. Bake in an oven preheated to 200 degrees for 15-20 minutes until golden brown. Transfer to cool on a wire rack.

  • Recipe from the book "Cookies". Only now I replaced buttermilk with a glass of natural yogurt diluted with water to 250 ml.

It is absolutely not necessary to put 2 types of flour ... In muffin baked goods, the quality of flour does not affect germination and theoretically is not needed at all. Moreover, if you put completely whole grain and bran, add not half a glass, but a third, it will be the same
The same story with sugar ... put everything brown like that
