"Morning" pies

Ingredients

Wheat flour 280 g
Fresh yeast 8 g
Kefir 125 g
Butter 50 g
Sugar 50 g
Egg 1 PC.
Salt 1/4 tsp
Any filling:
I have cottage cheese with raisins, prunes,
can apples + sugar + cinnamon

Cooking method

  • Grind yeast with 1 tbsp. l. sugar from the general rate.
  • Pour warm kefir into a bucket of HP, pounded yeast on top, softened butter, an egg. Then flour, salt, remaining sugar. Knead on any heated program for 15 minutes. The dough will collect in a sticky bun that spreads along the bottom. You don't need to add flour.
  • We put the dough into a bowl, close it whole. package and send it to the refrigerator overnight:

  • In the morning we take out the bowl from the refrigerator. The dough has doubled:

  • Roll out the dough on a floured table. I love small pies, so I cut out the circles with a glass, put the filling on each:

  • I no longer rolled out the dough scraps, but simply kneaded them in my hands, put the filling (prunes) and formed a bun.
  • Put the pies on a baking sheet covered with paper:
  • Cover with a towel and place on the stove. Let the pies rise for 20-30 minutes.
  • Brush with egg before baking.
  • Ffffse !! The pies are ready !!

Bake for 20 minutes.

Cooking program:

We heat the oven to 180C, open the door slightly.

Rusya , in the original recipe for 3.5 tbsp. flour - 1.5 tsp. l. dry yeast. If you do half the norm, then an incomplete teaspoon means.

In the morning I pulled it out, put the container on the battery, after which, twice, but not quickly, it still rose. Then, following your recipe, it turned out 19 (!!) small patties with dried apricots, super soft and fluffy. I love taking pictures, but today I am too lazy.

Flaksia , there can be a lot of reasons. Alternatively, the kefir was too hot and "cooked" the yeast. Or the refrigerator is very cold. In this case, you should have given more time for proofing the pies. Try to make the dough as usual, i.e. knead-rise-knead-form-proof-bake. Good luck!

And here it stood for 12 hours and did not rise by a single gram. I got pissed off, twisted ... and restoring the sequence of actions in the morning I remembered that I had not put the yeast

I have already decided on my diagnosis, it remains to decide what to do with the test. Is it possible to add yeast, knead, warm, dance with a tambourine and get something acceptable in the morning, or is it better to just go head-bending up the wall?

Here is my tray with hot butterflies and a lonely pale-faced pie. The photo is not great, but I expose it as proof that, despite all the troubles, the rolls were a success.

I did it with cabbage and mushrooms and with rice and eggs. Sugar put the same amount. The dough is slightly sweet, but I like it this way more than if the dough was bland. If I do it with any other fillings, I will definitely not reduce sugar
