Eggplant mushrooms in sour cream

3 medium eggplants
3 medium onions
200 gr sour cream
salt
vegetable oil

Preheat the oven to 180 degrees. Line a baking sheet with baking paper. Cut the eggplants lengthwise into slices 1 cm thick, brush with vegetable oil on both sides, put on a baking sheet and bake in the oven until tender.
While the eggplants are baking, dice the onion and fry in vegetable oil until dark golden brown. When the onion has the desired color, add the sour cream and simmer with the onion over low heat.
Cut the finished eggplants into slices at random and put in the sauce. Put out everything together for a few minutes, add salt.
Serve cold. With boiled potatoes this is something!
