The recipe from the site "Yulichkin's recipes" from podruga with my changes.

Eggplant mushrooms

3 medium eggplants
2 cloves of garlic
1 small onion
1 table. spoon of 5% vinegar
1 coffee spoon of sugar
2 table. tablespoons of vegetable oil + for lubricating eggplant
salt to taste

Peel the eggplants, cut lengthwise into slices about 1.5 cm thick. Brush with olive (any vegetable) oil, place on a baking sheet lined with baking paper and bake until soft in the oven.
Cut the onion into thin half rings, sprinkle with sugar, pour in the vinegar, add the squeezed garlic, mix.
Cut the cooled eggplants into pieces, add to the onion, salt, add oil, mix and refrigerate for several hours.

Girls, you can just roll up baked or boiled eggplants, and in the winter you open and make yourself any dish. Now I don't have this recipe on hand. I'll come home tomorrow, find it and write. I came home and rummaged through my notes. found only this one. But I have done everything before, I say with confidence, delicious and convenient!
Here is the recipe itself.

Eggplant semi-finished products

Bake the washed, large eggplants in the oven until soft, dip them in hot salted cold water and immediately remove the skin. Place tightly in prepared jars, add to a half-liter jar - 10 g of salt and 1 tbsp. a spoonful of vinegar. When the juice appears on top during compaction, cover the jars with lids and sterilize (half-liter jars - 45 minutes). Roll up. In winter, chop them finely, add fried onions, garlic, dill, tomato paste or tomatoes and simmer over low heat for 10 minutes. Or you can simply chop it with garlic, add herbs, season with vegetable oil and bon appetit!

For the first time, I baked several pieces of eggplant in the microwave (there was not enough space on the baking sheet of the oven), did not wait until they cool down, but immediately cut them into slices warm, mixed with vinegar, sugar, salt, added basil and oil. Everything is saturated and absorbed. Delight!
Today I cut all the eggplants into slices and baked them in the microwave (it went even faster) and poured even more basil right into the hot ones, added spices and garlic. Well, it turned out to be delicious.

I have an old microwave oven (Canyo), there are no instructions for it (on what modes I can only guess what temperature). Therefore, I just finely cut the eggplants into slices, put them on a plate and set the combined mode (micro + grill). At full power (I have 1000) for 4 minutes. Everything worked out great.
Next time I want to try only on the grill, but I'm afraid they will burn? Or not?
