Wine-marinated pork belly roll (Cuckoo 1054)

Ingredients

Pork brisket (underneck) without bones 1-1.2 kg
Dry white wine 1 st
Simple water 1-1.5 st
Salt taste
Spice taste
Cranberries (lingonberries), dried apricots, prunes, other fruits or berries optional

Cooking method

  • We spread the meat in a layer, add a little salt, make small cuts across, put berries (fruits) in them.
  • We fold the meat into a roll, tie it tightly with culinary thread, put on an elastic bandage on top.
  • Mix dry wine with water, a little salt to taste (you can add crushed garlic, spices, sugar for taste). Fill the finished roll with the mixture, leave to marinate for a day, turn over a couple of times. I marinated meat only with a mixture of water, dry wine, salt.
  • We put the roll in the pan, turn on Multi-cook mode, 30-33 minutes, 110 * and bring it to readiness.
  • We check the finished roll with a knitting needle, and leave it in a saucepan until it cools completely, then put it in the cold to ripen.

Marinade of dry white wine with water has a delicate sour taste, marinates meat well.
