Irina bakes bread according to old recipes and adheres to all the traditions of lighting the oven and kneading dough, although she has made her own adjustments to the recipe. Sometimes buckwheat honey or a little vodka is added to the dough. This makes the bread flavorful and sweet, and can be stored for up to two weeks.

Much depends on the location of the firewood. If they are not properly placed in the oven, the bread may not be baked or completely burn. Therefore, the wood should be dried and kept in a dry place for about a year.

And you also need to be able to knead the dough. Dissolve in water yeast, add one teaspoon of sugar and stir. After that, add flour and stir again to form a full-fledged dough and sprinkle with flour on top, cover with a towel and let stand for about an hour. If after an hour the dough rises and then falls, forming "wrinkles", we can assume that it is ready. Then salt or sugar is added and the dough is kneaded for ten minutes. The longer you knead the dough, the better the bread will be. Then the dough is laid out in a greased form and covered with a towel. After the dough has come up, you can put the bread in the oven. But before that you need to lubricate it egg white or sprinkle with flax, it will give the bread a shiny and appetizing look.

Another important condition is the heating of the oven. It must be warmed up two hours before baking, and this should be done so that the heat covers the entire oven. Whether the oven is well heated can be checked with paper. If you place it in the middle and it lights up, then the oven is very hot and you need to wait for it to cool down a little, because the bread may burn. But when the paper just smolders, you can safely put bread in the oven for an hour.

When the oven is melted, put the bread in it and close the doors so that the heat does not escape. The doors should be opened every ten minutes and checked if the bread is baked well. And it is also important: the doors in the house should be bolted so that a bad person does not come by accident and ruin the bread with his presence.

Finally the bread is baked ... While it is fresh, you need to put it on the table and sprinkle the crust with holy water or grease with honey, cover with clean cloth on top.
