Fruit cupcake

Ingredients:

  • 7 1/2 tablespoons butter (warmed to room temperature)
  • 3/4 cup sugar
  • 3 large eggs
  • 3 drops of vanilla essence (approximately 1/4 teaspoon)
  • 1 1/2 cups flour (sifted)
  • 3 tablespoons rum
  • 60 gr. dry cherries (chopped)
  • 60 gr. raisins
  • 15 gr. orange peel
  • 1 teaspoon bicarbonate soda (sifted)
  • 15 gr. marmalade

Cooking method:

  1. Place the oil in a heated container and stir.
  2. Add sugar and beat with a mixer until the whipped mixture is firm.
  3. Add eggs one by one and beat.
  4. Toss the flour and bicarbonate mixture using wooden spatulas. Add rum, cherries, raisins and zest with the flour.
  5. Place the resulting mixture in the container of the bread machine and prepare the cake in the CAKE mode, following the instructions.
  6. Brush the top of the cake with marmalade.
